rainy saturday – kale and feta omelette

saturday rain

i woke up this morning to the sound of rain. lots of rain. we have a skylight at the top of our 3rd floor stairs which leads to the master bedroom. whatever rain pelting down that i hear from my bed is magnified significantly when i open the door to head downstairs.

pelt. pelt. pelt. goes the rhythym of the rain.

it’s a nice feeling, though. we just finished brunch and i’m currently sipping my coffee while still in my pj’s and slippers. the sound coming from outside is soothing while we’re warm and comfy at home.

chaeli was famished. her appetite has surged these past few months. i made her 2 scrambled eggs, 1 multigrain toast with margerine, some grapes and a glass of milk. doesn’t sound like a lot but for chaeli, in the past, she would get through just 1 egg and maybe a third of the toast. and rarely did she ever finish her milk.

i made myself my usual go-to meal for weekend brunch. a 2-egg omelette, chicken bacon, 1 small multi-grain bagel, grapes on the side and of course, my cup of aeropress-ed coffee. using our favourite kicking horse coffee brand. i had grizzly claw today but normally, we stick with their kickass beans. strong, fairtrade, organic stuff at its best!

i was craving another swiss chard and goat cheese omelette but we didn’t have any swiss chard. just kale. and i didn’t feel that the goat cheese would work with the kale for me this morning. so i decided to chop up the kale and crumble in some feta cheese. it worked! i will admit the kale does not give the omelette as much flavour as spinach or swiss chard, but it still worked. and i know i gained some valuable nutrients and fibre in my meal.

unfortunately, we will have to leave the house – the library is waiting for some items that are due today and of course, there’s some grocery shopping we need to do to stock up for the week. if it weren’t for that, i would gladly stay in my pj’s all day long.

not sure what the rest of the day will involve. chaeli has a math test on monday but it doesn’t look too difficult. there’s laundry (there’s always laundry) and i have to figure out something for dinner.

i won’t be surprised if she wants to watch twilight – new moon. so there’s definitely that at some point.
